Onion delight – Lakshmi Kumar Ingredients: Onions 500 gm Dried Red chillies 2-3 Tamarind  - size of a gooseberry Oil 4 tbsp Asafoetida 1 pinch Salt to taste For tempering mustard seeds and curry leaves. Method: Peel and chop onions into medium sized pieces. Add 2 tbsp oil in a pan and saute the chopped onions with red chillies and tamarind. Add salt as per taste. Allow it to cool. Once cooled, grind into a fine paste. Then add 2 tbsp of oil in the pan and splutter the mustard seeds, curry leaves and safoetida.  Add the paste and keep stirring till well cooked. Onion Delight is now ready to be served as an accompaniment to a variety of dishes such as iddli, dosa, uthappam, upma and parathas. Tip : You may add a little jaggery to enhance the taste. Aloo paratha – Revathi Bhasker Ingredients: 3 cups wheat flour; and a little for dusting 3 boiled and mashed/grated potatoes 2 green chillies finely chopped Finely chopped coriander Salt to taste 1 tsp carom seeds (ajwain) A pinch of asafoetida 1 tsp turmeric powder 2 tsps lemon juice 1/4 cup milk 1 tsp oil 3 tbsp ghee for parathas Method: First add the carom seeds and a little salt to the whole wheat flour and knead the dough adding milk and a little water.  When dough is done, add the oil and knead it once again and keep it covered. Simultaneously boil the potatoes and mash them or grate them. Add salt, asafoetida, green chillies, turmeric, lemon juice and coriander to the potatoes and divide them to make six even sized balls. Divide the dough also into six even sized balls. Roll each of them into a medium sized chappati dusting it with the wheat flour. Spread a little ghee, dry flour and place the ball of potato in the centre and seal it. Pat it slightly, roll it once again and cook on the tava. Spread a little ghee and flip it. Remove from the tava when golden brown on both sides. Serve hot with curds and pickles or onion delight.
