Add sugar, eggs, vanilla extract and whisk. Add your flour, cinnamon, baking powder, baking soda, salt and fold in, not over mixing. Pour into greased loaf pan and top with chocolate chips and walnuts if desired, or leave plain. Bake about 1 hour.
