One thing I can recommend is to pour the marinade to a small saucepan and boil it, adding some extra soy sauce and cooking sake if there's too little amount. The fat leaking from the chicken to the marinade mixed with the sauce makes it an amazing dipping sauce for the karaage. ...1

@ShienXIII.OldAccount6 years agoTried cooking with twice. I used Chinese shaoxing cooking wine the first time and Japanese cooking sake the second time, both turned out quite well. I tried cooking it to dark brown to get more crunchiness. 11/10 will cook again ...1

@JapaneseCooking10112 years agoYou can skip the sake in this recipe if you don't have one. There will be less liquid, so you should make sure that chicken is coated with the marinade on all sides. The flavor will still be good. 3

@JapaneseCooking10111 years agoWe recommend sake to get the authentic flavor, but yes, you can skip it if you don't have one. Make sure you put other ingredients though such as fresh ginger. Deep fried chicken can't go wrong really! 20
